Renee Mathur, a CSA member, provided the following recipe to us saying, "It rocked!"
Spaghetti Squash with Tomato Sauce
(from Janet is Hungry blogspot)

1/2 large squash
4 tomatoes
1 T olive oil
2 cloves garlic, minced
1/2 onion, diced
2 stalks celery, diced
3/4 C mushrooms, diced
1/2 green pepper, diced
1 can tomato paste
1 t rosemary, chopped
1 t oregano
1 t basil
salt & pepper
Parmesan cheese
Using a pot, saute onion and garlic in olive oil. When onions are translucent, add the celery, mushrooms, green peppers. Saute for 5 minutes more. Seed and chop the 4 tomatoes and add to the veggies. Add the three herbs and the tomato paste. Simmer for one hour. Cut the squash in half, brush cut side with oil and lay cut side down on baking sheet. Bake at 375 degrees for 45 minutes. Remove squash from oven and using fork, scrape the stringy flesh and spoon it onto plates. Top each plate with sauce and cheese.
