Arugula Salad with Dijon Dressing

1 t Dijon mustard

2 T fresh lemon juice

2 T olive oil

Salt and pepper to taste

½ bunch of arugula (½ lb.), cleaned and chopped

¼ head of lettuce, chopped

6 radishes, sliced, grated, or julienned

3 turnips, sliced, grated, or julienned

1-2 green onions, chopped  

In a large bowl, whisk together mustard, juice, oil, and season to taste with salt and pepper. Add arugula, radishes, and turnips, and toss to coat. Garnish with green onions. Makes 4 servings.

NOTE: To increase servings, add chard or lettuce. Try with sliced berries, sliced oranges, or chopped walnuts.
