Braised Greens with Bacon and Cider

4 slices bacon

1 C green onions, chopped

1 bag (3-4 C) kale, chopped

3 C lettuce, chopped

1/3 C apple cider (or apple juice)

1 T apple cider vinegar

1-1/2 C diced green apple

salt and pepper to taste  

Heat lidded skillet over medium heat. Add bacon and cook until crisp. Remove bacon, crumble, and set aside (reserve 1 t grease).  Increase heat of skillet and add green onions; cook 3-4 minutes until tender, stir occasionally. Add kale; cook 5 minutes until wilted. Add lettuce, cider and vinegar; cover, and cook 10 minutes. Add apples, salt & pepper and cook 5 more minutes. Sprinkle with bacon and serve warm.

NOTE: Add more bacon if you desire. Add chopped garlic scape for added flavor – cook along with the onions.
