Butternut Apple Crumble

Filling

1 small butternut squash, peeled & seeded

3 apples, peeled & cored

2 T lemon juice

3 T brown sugar

1 T cornstarch

¾ t cinnamon

¼ t nutmeg

Preheat oven to 350F. Grease a 13 x 9 casserole dish. Cut squash and apples into ½-inch pieces. In a large bowl, combine squash, apples and lemon juice; toss to coat. In a small bowl, whisk together the brown sugar, cornstarch, cinnamon, and nutmeg; sprinkle over squash and apples; stir until pieces are coated. Pour into prepared baking dish. Cover with foil and bake for 20 minutes. Meanwhile, in the small bowl, combine “topping” ingredients; cut in butter until it resembles coarse crumbs. After squash and apples have baked for 20 minutes, remove dish, and give a quick stir. Then sprinkle topping over squash and apples. Bake uncovered for 25 minutes until squash is tender and topping is lightly browned. Best served warm over vanilla ice cream. But also quite delicious for breakfast!
