Cheesy Eggplant Casserole

1 eggplant, peeled and diced

1 ½ cup shredded cheddar cheese

1 cup dry bread stuffing mix

1 clove garlic, crushed

2 T diced onion

1 egg, lightly beaten

1 tsp dried Italian seasoning

salt & pepper to taste  

Preheat oven to 350F. Place the eggplant in microwave safe dish. Microwave on High for 5 minutes or until tender, stirring once. Transfer to a 9 x 9 baking dish. Mix in ½ cup cheddar cheese, stuffing mix, garlic, onion and egg. Season with Italian seasoning, salt and pepper. Bake 15 minutes. Top with remaining cheese; continue to bake 15 minutes, until cheese is bubbly and lightly browned. NOTE: Try adding diced red bell pepper for additional color and flavor (see photo).
