Green Bean and Tomato Salad

1 lb. green beans, trimmed

2 C tomatoes, cut into wedges, then halved

2 T freshly minced onions

2 T red wine vinegar

3 T extra virgin olive oil

½ tsp. salt

¼ tsp. pepper

1 tsp. oregano

Cook beans in boiling water for 7 minutes or until tender. Drain. Place beans and tomatoes in bowl, toss gently to combine.

Using a whisk, stir onion into vinegar. Let stand for 10 minutes.

Add oil, salt, pepper and oregano to vinegar mixture, stirring with a whisk until well blended. Pour vinaigrette over salad; toss well.

NOTE: Garnish with feta, fresh basil, or chopped green onions.
