Green Bean Salad

1 lb. green beans, ends trimmed

¼ C basil, coarsely chopped

1 C leeks, sliced

2 stalks celery, sliced

2 T olive oil

Juice from 1 fresh lime

 

Bring a pot of water to boil. Cook beans until crisp-tender, about 10 minutes. Drain; rinse with cold water and drain again. Transfer to a serving dish. Toss with basil, leeks, celery, oil, and lime juice. Let stand at room temperature for about 30 minutes to allow flavors to meld. To serve, season with salt and pepper, and maybe a bit of lime zest over top.

NOTE: If you have fresh parsley, you could substitute it for the basil.
