Italian Chicken Bake

3 chicken breasts, cut into small cubes

2 cups potatoes, cut into bite-size pieces

2 cups green beans, cut into -1-inch pieces

1/2 medium onion, sliced

1 packet Italian dressing seasoning

6 T butter, sliced

1 clove garlic, minced (optional)

Preheat oven to 350F.  Arrange cut potatoes, green beans, and chicken in a greased 9×13 baking dish so they each take up one-third of the dish (see photo). Sprinkle dressing mix over entire dish and gently mix in. Mix in sliced onion and garlic, if using. Top with sliced butter and bake, uncovered, for 1 hour.  Check at the 45 minute mark to be sure nothing is over-baking or drying out. If so, cover with foil for last 15 minutes of cooking. 

NOTES: Be sure potatoes are cut small to cook a bit faster and get that great roasted texture. Original recipe calls for 1 stick of butter; use what you prefer.
