Kale & Mozzarella Egg Bake

1 C kale, destemmed and chopped

2 t olive oil

1-1/2 C mozzarella cheese

2 green onions

8 eggs

1/2 t salt

1/4 t pepper

Preheat oven to 375F. Grease a 13 x 9 casserole dish. Heat oil in skillet, add kale and cook until wilted, about 3 minutes. Transfer kale to casserole dish spreading evenly to cover bottom of dish. Layer cheese and green onions atop kale. Beat eggs and season with salt and pepper. Pour over kale mixture, then use a fork to carefully combine ingredients in the dish. Bake 30-35 minutes until lightly browned. Cool 5 minutes before cutting. Serve hot.

NOTE: This is a simple recipe that can easily become more complex if you’re daring to celebrate the festive flavors of summer – try adding halved and sliced summer squash, a handful of mizuna or arugula, some minced garlic scapes, or chopped radishes to this dish and add 2-4 more eggs to compensate and allow for a larger casserole.
