Late Summer Salad

4 T olive oil 

3 T fresh lemon juice (or lime)

2 T honey

½ t kosher salt

¼ t pepper

¼ t crushed red pepper (optional)

1 cucumber, peeled, seeded and chopped

2 C green beans, trimmed, blanched and cut into thirds

1 C fresh corn kernels, cooked

1 C Juliet tomatoes, quartered

½ C basil, coarsely chopped

½ C walnuts, chopped (optional)

Freshly grated Parmesan cheese

 

Whisk together first 6 ingredients in a small bowl; set aside. Place prepared cucumber, green beans, corn, and tomatoes in a large bowl. Add dressing and toss to coat. Season with additional salt and pepper if desired. Garnish with chopped basil and nuts and grated cheese.

NOTE: Try adding olives, onions, or even grilled shrimp or chicken for other variations.
