Strawberry Soup

 1 C apple juice

1 C water, divided

½ C sugar

½ t cinnamon

1/8 t cloves

2 C strawberries, cleaned and hulled

2 (8 oz.) cartons strawberry yogurt

 

In a saucepan, combine apple juice, ¾ C water, sugar and spices; bring to boil over medium heat. When sugar has dissolved, remove from heat and cool. Meanwhile, place berries and remaining water in food processor/blender and process until smooth. Pour into a large bowl. Add juice mixture and yogurt; stir. Cover and chill for an hour or so. Serves 6-8.

NOTE: Garnish each bowl with an additional berry or a fresh chopped herb such as mint or basil. Try freezing to make a frozen yogurt!
