Summer Onions Pie

½ package of refrigerated piecrusts
2 T butter
1 large sweet onion, halved & thinly sliced
1 leek, all of white and most of green, thinly sliced
2 eggs
1 C sour cream
1 C Gruyere cheese (or Swiss)
½ t salt
½ t black pepper
2‐3 slices of bacon, cooked & crumbled (optional)

Prep the one piecrust if necessary by rolling out to make smooth. Place crust in 9” pie or tart pan. Prick with fork to allow steam vents. Line sides with foil to prevent burning. Bake at 350F for 18 minutes.

Meanwhile, melt butter in skillet, and sauté onion and leek for 10 minutes until translucent. Set aside to cool.

In large bowl, whisk together eggs, cheese, salt, and pepper.  Add onion and leek and fold together. 

Pour mixture into crust and bake at 350F for 20 minutes. Set aside for 10
minutes before serving. Garnish with bacon. Enjoy!

NOTE: May use all onion or all leek, if desired. Just be sure to have a volume of 3-4 C worth for pie.
