Sweet Corn & Zucchini Pie

4 T butter

1 onion, diced

3 ears sweet corn, cut from cob

4 C zucchini, grated or sliced (or both**)

1 C bell pepper, diced

1 t dried basil (or 1 T fresh basil minced)

1 t thyme

1/2 salt

1/2 t black pepper

1 1/2 C mozzarella cheese

4 eggs, beaten

5 mini sausage links, sliced (optional)

 

Preheat oven to 375F. Melt butter in large skillet.  Add onions, corn, zucchini, and bell peppers. Cook 8-10 minutes until veggies are soft.  Remove from heat.

Add and stir in herbs, seasonings, cheese and eggs. Pour mixture into a greased pie dish or tart pan.  If using sliced zucchini, arrange them on the top in a circular pattern around the pan, but not overlapping.  Sprinkle with extra cheese if desired.

Cover with foil and bake for 30 minutes.  Remove foil and continue to bake for another 5 - 10 minutes, until knife inserted comes of clean.  Let stand for 10 minutes before serving. YUM!

 

** You can use grated zucchini in the mixture, and the sliced zucchini to layer on top for presentation.
