Zucchini Brownies

2 C flour

1-1/4 C sugar

½ C cocoa powder

1-1/2 t baking soda

½ t salt

2 C zucchini, grated

½ C canola oil

1 egg

2 t vanilla

½ C chopped nuts (optional)

In a bowl, whisk all dry ingredients together.  In mixer, blend all wet ingredients together. Add dry mixture to wet mixture and stir together. Add nuts, if using. Pour into greased 13x9 dish. Bake at 350 F for 25 minutes.

Icing Option: Melt in a pot over medium heat, 4 T butter. Stir in 2 T cocoa powder, and 3 T milk. Remove from heat and add 1 t vanilla and 2 C powdered sugar. Spread evenly over cooled brownies before cutting. OR instead of icing, top with powdered sugar.

Variations: Add 1 t cinnamon, ½ t cloves, and 1 T instant coffee mixed in ¼ C water into brownie recipe. Top brownies with icing then another ½ C chopped nuts or chocolate chips.
