Zucchini & Nutella Swirl Muffins

1 ½ C flour

½ t salt

½ t baking soda

1 t baking powder

½ t cinnamon

1 stick butter, softened

¾ C sugar

1 egg

1 C shredded zucchini

1 t fresh lemon zest

½ C Nutella

Preheat oven to 350 F. Line a muffin pan with paper liners. In a large bowl, whisk together flour, salt, baking soda, baking powder, and cinnamon. Using an electric mixer, cream together butter and sugar until fluffy. Scrape bowl, add egg and continue to bet together. Slowly add dry ingredients and stir to combine. Add zucchini and lemon zest and stir until well blended. Fill paper liners so they are 2/3 full. Dollop 1 t of Nutella on top of each scoop of batter. Swirl with a toothpick. Bake for 20 minutes. Check doneness with another toothpick; it should come out clean before you remove pan from the oven. Remove muffins from pan. Peel off paper and cool slightly before serving with vanilla ice cream for a tasty dessert or for a yummy breakfast.
