My family loved our first experience with bok choy! We had a delicious Asian-inspired rice bowl. We topped cauliflower rice with steamed bok choy, ground turkey and an over-easy egg. Just tried the tatsoi stir-fry and it is divine! This CSA has been the most fun I've had cooking. Each Tuesday is like a Culinary Christmas! I don't want to waste one bit of the veggies so each meal of the day is healthy. I've lost weight, feel better about myself and an unexpected side effect - my skin is acne free!

Just wanted to send you a note to tell you how much we are enjoying the vegetables. We are 67 years of age and neither one of us have ever eaten Swiss chard, arugula, eggplant and a few other things until now. I have been meaning to write this letter of appreciation WEEKS ago. This was my first year participating in the CSA and I absolutely loved it. I had heard about it two years ago and I meant to sign up last year but the stars just didn't align. Well this year I was determined and after experiencing it, I am on board for the long haul! Everything is yummy, and our son, home from college for the summer, is even asking for EXTRA lettuce on his sandwiches...that's never happened before! Had to stop a moment and say we love the food! Thank you for listening and providing much more enjoyable veggies. Back to basics is sometimes a great thing! We don't waste anything, but I still have veggies I blanched last year in the freezer. I will purée them all and put them in my spaghetti sauce this fall, so they will be used but not as fresh veggies should be used. We are eating everything in the boxes this year... no freezing required! Thanks for all your hard work and for sharing your bountiful harvest!

Dale & I are new CSA members this year & we are loving your produce & emails. Thank you for all of your hard work. All of the food has been amazing. Even though you send a list of what to expect in the boxes, it is always like a surprise when I open the lid & look inside. Those strawberries are just like my grandfather used to harvest when I was little. The lettuce, kale, onions, radishes, turnips, and kolhrabi have been delicious! When I was growing up, my mom always breaded and fried her eggplant. The texture did not agree with me and I was made to cleanup my plate. I have been giving away my eggplant so it would not go to waste. My one friend told me to stuff my eggplant. I did some research and found a recipe. I experimented. It was the most amazing food that I ate and most of it came from your boxes you drop off for me. This year has been amazing and the food is tasty. I am experimenting with vegetables that I would normally walk by in the store, because of your magic box. Thank you for all you do for me.

I have really enjoyed most of what you have offered us, and we have been members about 4 or 5 years. I wanted to let you know that I particularly enjoyed something this year I never remember eating in my whole life, the Kohlrabi. I say keep that one coming, and I have about 4 recipes that really make it come alive. I had a stroke about 7-1/2 years ago, and your farm was one of the ways I learned to do new things. I had to give up my work and have become the main cook in the house. I have really enjoyed participating with you. Keep up the good work!

Thanks so much for the amazing vegetable boxes. Everything was great, although we naturally like certain veggies better than others. The green beans were fantastic! There is nothing I enjoy more than fresh, tender, steamed green beans. I also enjoyed the newsletter and recipes each week and I tried not to read it until after I had picked up the box. It was fun to be surprised as to what was in the box each week. Until next year…

My husband and I try to use multiple veggies in our recipes, and we made one last night that calls for four (kale, bok choy, Swiss chard, and green onions). It was simple and delicious, especially since my greens were already washed and trimmed. Next time, I'll mix the dressing the night before, and it will be a super easy after-work meal. Thanks for the veggie inspiration!

You may find it funny to know that I HATE turnips, but I absolutely love your turnips French style- raw with a smear of butter and dipped in coarse sea salt. Works great with the radish. Strawberries are fantastic. I have some marinating in good balsamic vinegar and black pepper.
