Corn Dip

6 ears of corn, cooked and kernels removed

2 small cans of chopped green chilies

1/2 C chopped green onions (or any onion)

1 C mayo

1 6-oz. bag shredded Parmesan cheese

1 8-oz. bag shredded Monterey Jack/Colby cheese

2-3 T hot peppers (optional)

Mix all together in large bowl. Pout into a pie dish or small casserole dish. Back at 350F for 45-50 minutes. Broil for 5 minutes until golden brown. 

Let sit for a few minutes. Serve warm with Frito Scoops. YUM!
